In Deutschland kaum bekannt, gehört er in Frankreich zum bleibenden Bestand der Humoristen, auf deren Texte immer gern zurückgegriffen wird. Allais’ großes Thema war die Liebe. In ereignisreicher Zeit aufgewachsen, die vom Deutsch-Französischen Krieg 1870/71, der Kommune und späteren revanchistischen Bestrebungen der Politik geprägt war, verspottete er gern die Militärs, besonders den Kriegsminister Boulanger. Vorwiegend aber widmete er sich dem Milieu, in dem er seit seiner Übersiedlung nach Paris zu Hause war: der Bohème von Quartier Latin und Montmartre. Leichte Mädchen, geizige Schankwirte, gehörnte Ehemänner, trinkfeste Künstler, aber auch vertrocknete Beamte, heruntergekommene Adlige, wunderliche Seeleute und Zöllner sind die Helden seiner griffig geschriebenen pointierten Texte.
